Boxty is traditional Irish potato pan cake. Irish meaning of boxty is ‘pour house bread’. Coddle is made from layers of roughly sliced pork sausages and thinly sliced (Rasher) fatty back bacon with sliced potatoes, and onions. Traditionally, it can also include barley. This is an economic dish. colcannon is a traditional Irish dish mainly consisting of mashed potatoes with kale – a cabbage family vegetable or cabbage. The other ingredients are milk, cream, leeks, onions, butter, salt pepper etc. This dish usually eaten in winter as kale is a seasonal vegetable. Common grains used in Irish dishes are wheat, oats and barley. Vegetables widely used are potato, tomato, cabbage, kale, turnip and onion. They have meat of beef, lamb, mutton, chicken, offal and geese. Being an island seafood found here is fish, shellfish, smoked salmon, prawn and lobster.
